Three Year Blogiversary!

I know things have been a little slow around here, but life has more or less gotten in the way, with selling our house, moving 1000 miles, crashing at my parent's house for a month, and setting up shop in a new home in the northeast. I promise there are plenty of recipes to come, and soon! 

Today, I am celebrating my three year (!) anniversary of writing this food blog with a list of my top 10 favorites from the past year.  As I reviewed my posts, I saw quite a few recipes that we loved and have made over and over again.  This was previously something that is quite rare for us, as I have a list of new recipes to try that is seemingly a mile long, and I like to try many new recipes each week.  Please enjoy a second look at some of these favorites of ours.

1. S'mores Cupcakes

I am starting off with the only dessert recipe on this list - quite a change for me!  I think part of the reason for the lack of sweets on the list this year is my switch over to clean eating.  I was baking up less and less of the decadent treats.  These cupcakes were wildly popular at a summer cookout last year, and are a really fun twist on a classic summer treat. 

2.  Whole Wheat Breads

I'm sort of cheating here, but I have loved everything that I have made so far from Peter Reinhart's Whole Grain Breads book.  Reinhart really knows what he is talking about, and I return time and time again to this book for bagels, bread, burger buns, pizza dough, etc.  The time commitment may seem intimidating, but it's really not that bad if you plan ahead.

3. Southwestern Chicken Pizza

When it comes to homemade pizza, my husband and I have had a blast creating unique topping combinations at home.  I came across this pizza recipe one day while looking for a way to use up tomatillos, and it became an instant classic in our house.  It's our favorite pizza recipe, by far!

4.  Artichoke Stuffed Turkey Burgers

I don't think it gets much better than a burger stuffed with artichokes and fontina cheese.  Need I say more?

5. Pico de Gallo

I was dying to find a replacement for my husbands all-too-frequent snack of chili+salsa+velveeta.  One weekend, at his suggestion, we made an old favorite of his from back home.  I fell in love, too, and demanded we make it every weekend thereafter.  Though we have missed some here and there, this pico de gallo recipe is pretty much a given on the weekends in our house. 

6. Oat Bran Cranberry Pancakes

Bisquick used to be my standard pancake "recipe."  I slowly began to branch out and try various scratch pancake recipes, but after the turn to eating clean, still needed something more nutritionally sound.  The search was most definitely over after trying this recipe, and I now use it as a base for just about any kind of pancakes (though truthfully, apple cinnamon is almost always what we end up making).  The batter seems thin after preparing it, but puffs up nicely while cooking and ends up being a great texture.

7.  Lemon Thyme Roasted Turkey Breast

For the first time last year, I went with a turkey breast on Thanksgiving instead of a whole bird.  I knew I wanted to add some flavor to it, and Cook's Illustrated came through for me yet again.  This was absolutely phenomenal, and I plan to use it for a long time coming!

8.  Baked Oatmeal

Between whole wheat bagels and baked oatmeal, I was never short on healthy, filling breakfast ideas this year.  A warm bowl of this oatmeal was a perfect, and very quick, way to start those cold midwest winter mornings.

9.  Italian Chicken Patties

This unassuming dish packs great flavor and comes together relatively quickly without too much effort.  Perhaps it's the gravy talking, but I was instantly in love.

10.  Sesame chicken and noodles

This was yet another dish that had us fighting for the leftovers.  I think it's a must-try if you like sesame!

Two year Blogiversary

I can't believe I've been doing this for two years! Last year's round up seems like a piece of cake, now. I've been blogging much more consistently the past few months and had around 130 recipes to choose from. It was so hard to narrow it down, and although I have many favorites from Barefoot Bloggers and Tuesdays with Dorie, I excluded those. I wanted a top 10 but had to settle on a top 12. ;-)

In Dessert-First order...

1) Banana Split Cupcakes
A collaboration with Katie of Good Things Catered that was oh so right. Delicious and cute, if I do say so myself.


2) Cranberry Apple Crunch
Straight from Katie and also available in the plain apple crunch variety, I typically inhale this within minutes of it coming out of the oven. It surely needs a new photo...


3) Chocolate Biscotti
I have made this recipe time and time again. TWICE in the span of a week at my mother in law's house when we were staying for Christmas. It is fantastic.


4) Oreo Cupcakes
Totally fun, amazing whipped cream frosting, hidden oreos - what's not to love?


5) Chocolate Peanut Butter Cupcakes with Whipped Peanut Butter Cream Cheese Frosting
I'll even take just the frosting on this one - it's awesome! If you love the chocolate/peanut butter combo - this is your cupcake.


6) Jordan Marsh Blueberry Muffins
If you like blueberry muffins, give these a try at least once - even if you already have a favorite recipe. They are amazing!!


7) White Chicken Chili
Mmmmm, so comforting during the cold, harsh winter!


8) Kung Pao Chicken
This dish is all we ever order from Chinese take-out, so I was super excited to find such a great homemade alternative.


9) Evelyn's Favorite Pasta
I never need to go to the Cheesecake Factory again, because now I can make my favorite dish at home!


10) Chicken with 40 cloves of garlic
Not as scary as it sounds, a simply fantastic way to cook chicken. YUM.


11) Potato Artichoke Gratin
Leftover potatoes will never again go to waste in my kitchen.


12) Chicken Parmesan Burgers
Elly's quick, easy, and scrumptious burgers have me wondering why I ever fire up the grill - a broiler works wonders!

Happy Blog-iversary to me!

Well, on this day, one year ago, I started this blog with my first post. I had jumped on the bandwagon of a new blogging event, Platinum Chef Challenge, and I got such encouragement from Cara after Round 1, that I decided to start a blog with my entry for Round 2. Also around that time, wedding planning (long distance, might I add) kicked into high gear, so I wasn't posting as often as I would have liked. The new year brought new blogging events, new ideas, and more free time to do it all in. I've been learning a lot about cooking and baking through this crazy world of blogging, and I look forward to what the future holds. I have even contemplated changing the name of my blog, because I no longer thing people have to tread lightly when trying something from here. :-)

In the next year, I hope to be more creative and present more original dishes (outside of the aforementioned Platinum Chef Challenge, which seems to be the only thing to get my wheels turning!). I also plan to work a lot more on cake decorating techniques, so watch for that! Of course, there will still be plenty of my favorites: Tuesdays with Dorie, Barefoot Bloggers, and Platinum Chef Challenge!

So, for my blog-iversay, I thought I'd go back and highlight some of my favorite recipes from the last year (that I actually blogged about)(purely chronological order):
1. Sweet Mexican Wontons. I made these for Platinum Chef 2, and was darn impressed with myself. I have been searching for a reason to make them again... and I think I have found it, so I can't wait!

2. Banana Roll with Blueberry Lemon Cream Cheese Filling. This recipe came courtesy of Amber's Kitchen, and was the first one that I brought to work that got a recipe request. SO tasty and great for summer!


3. Spicy Garlicky Limey Chicken. This has been an absolute favorite in our house, another one courtesy of Amber's Kitchen.

4. Black Bean Burgers. Another product of the Platinum Chef Challenge was these burgers. We LOVE them and have them whenever we need a change from chicken. My husband loves the cheesy center!

5. Baked Chicken Parm. This recipe, from Katie at Good Things Catered, holds a special place in my heart because I had been in an awful cooking rut where nothing was coming out right and things were just wrong. This recipe pulled me right up and was fabulous all on it's own. (Thanks, Katie!)

6. Old Time Vanilla Ice Cream. I live for ice cream. (really). I had been trying a few hit or miss recipes, but when I stumbled on this gem, I never looked back. It was SO creamy and delicious, I almost couldn't believe it! Over time, I have tweaked the recipe to contain less heavy cream (trust me, my hips don't need it!) and it has held up beautifully. It's a very versatile recipe that is used as a base for many variations, which can be found on Doc's website (yes, the yellow hurts my eyes, too!).

7. Pumpkin and Goat Cheese Risotto Balls. *Love*! These were soooo good. Definitely a rare treat, for me. The warm risotto, creamy goat cheese, and cool mascarpone sauce worked together to make a beautiful dish. This is another recipe that I can't wait for another reason to make!

8. Warm Asian Noodle Salad. This was a dish that came highly recommended and seemed like something we'd like, so I gave it a shot. We love it SO much that I immediately made plans to make it again the following weekend. Great combination of flavors and I loved the fresh vegetables. Great dish!

9. Caramel Butterscotch Brownies. On the quest to perfect my husband's favorite dessert, I flipped through my new copy of Baking Illustrated and settled on a brownie recipe. Boy, was I glad I did! This took the brownies to a whole new level, and has floored everyone that has tried them. They are amazing!

10. Island Shrimp and Tofu Pizza. This was something that came out of another Platinum Chef Challenge, but I thought it would be better suited for the Beautiful Bones event. It's something I never would have come up with, otherwise, but I was SO glad I did. It was an amazing combination of flavors that I am extremely proud of, even if it sounds really whacked out. :-)
